Greek Eggplant Moussaka

Ingredients:

2 large eggplants –thinly sliced

2 large potatoes –peeled and sliced

Vegetarian mince 100g

Tomato paste 1Cup-140g

Ricotta Cheese 250g

Fresh cream 250ml

Lentils 200g

3 eggs

Mozzarella cheese for topping 150-250g

Diced tomato 400g

Pine nuts few

Seasoning

Salt 20-30g

Pepper 5-10g

Nutmeg few

Sugar 5-10g

Paprika few

Olive oil 50-80g

Steps

Vegetable Preparation

  1. Eggplant and potato thinly sliced and deep fry until golden.

Mince preparation

  1. Add vegetarian mince into large frying pan with olive oil.

  2. Add in diced tomato , paste and lentils along with salt, pepper and sugar

  3. Stir until cooked

Sauce topping preparation

  1. In a large bowl, beat 3 eggs then add in ricotta mixture followed by cream

  2. Add nutmeg, salt and pepper to taste

  3. Mix until texture is smooth and creamy

Layering

  1. In deep oven proof dish add some olive oil to base

1st layer-Eggplant, potato, 1/3 sauce mixture,some cheese and  ½ of vegetarian mince mixture

2st layer- Eggplant, potato, 1/3 sauce mixture, ½ of vegetarian mince mixture

3rd layer-Eggplant and the last1/3 of sauce mixture and sprinkle mozzarella cheese on top

Add paprika and pine nuts on top

Bake in over 180 degree for 30 minutes.
