Curry Puff

These curry puffs are fabulous whether hot or cold and perfect for taking to parties or picnics as they travel well.

And If you’re a chilli addict you can add more curry powder to this recipe.

Ingredients:

Pastry:

Plain Flour 1kg

Butter 400g

Water 1 cup

Salt a little

Filling:

Potato 2kg, diced

Mixed Veges (if preferred)

Salt

Sugar

Curry powder

Mushroom seasoning

Thick soy sauce

 

Method

Pastry

  1. Rub softened butter into flour.

  2. Add water, a little bit at a time.

  3. Add a little bit of salt
  4. Mix well until dough form

Filling

  1. Dice potato and cook until semi soft, then filter out the water.

  2. Add sufficient oil into pan, when oil has heated add curry powder. Be careful not to burn the curry powder.

  3. Add in potatoes and flavorings (salt, sugar, thick soy sauce, mushroom seasoning).

  4. While stirring can add more oil if it gets too dry, we want sticky filling, not dry and crumbly.
  5. Adjust the taste.
  6. Leave to cool

Making the Curry Puff

  1. Cut dough into 4g pieces.

  2. Use rolling pin to roll into circle shaped pastry.

  3. Place the filling on one half of the pastry, and fold the other half over it.

  4. Crimp edges to seal.

  5. Deep fry until golden brown.
