This is potato salad the old fashioned way – with eggs, potato and carrot. It’s really good to serve with hot or chili.
3 potatoes, diced
3/4 cucumber, diced
1/2 carrot, diced
4 eggs, pieces
Mayonnaise, amount according to preference
Black and salt, to taste
Dice potato and carrots.
Boil potato, carrot and eggs separately.
Be careful not to overcook the potato, otherwise with turn into mashed potato rather than potato salad.
You just want it so that it’s not crunchy.
While those are boiling, remove the cucumber seeds then dice. Do not boil the cucumber.
After ingredients are all prepared, mix the potato, carrot and cucumber.
Use a spoon to cut the boiled eggs into moderate pieces.
Mix together well and refrigerate until chilled.
